香蕉布朗尼


好久没做布朗尼了。在我还未开始写blog时,曾做过一次,当时没有用好的巧克力,结果布朗尼太甜腻,没有浓郁的巧克力香味。
答应了Aunty Young, 我再次尝试做brownie。这次,下足本钱,用71% dark couverture chocolate,黑可可粉,organic 黄砂糖,Dole banana (这牌子的香蕉比较不甜,选择这个香蕉做brownie比较适合。可以用类似的香蕉代替),加上好食谱,结果,我深深地爱上了布朗尼。
这个布朗尼充满纯纯的可可香,甜度刚好。吃的时候偶尔咬到香蕉颗粒,分外惊喜,加上香脆的胡桃,真是好吃极了!结论是,做布朗尼一定要用好的巧克力和可可粉,省不得啊。




香蕉布朗尼

材料:(原食谱用6"方形烤模,我用7")
150g 苦甜巧克力(我用71% dark couverture chocolate)
70g 奶油
50g 黄砂糖(我用organic黄砂糖)
40g 牛奶
30g 动物性鲜奶油
1颗 鸡蛋
50g 低筋面粉
12g 可可粉(我用黑可可粉)
2g 泡打粉
100g 香蕉,切成小丁
12颗 胡桃 (pecan)

做法:
1. 烤模铺上烘焙纸。
2. 将蛋用打蛋器搅散,加入牛奶和鲜奶油搅拌均匀。
3. 将苦甜巧克力和奶油隔水加热直到融化。融化后马上离火,不要过渡加热。
4. 加入黄砂糖搅拌至糖略为融化。
5. 在步骤4缓缓地倒入步骤2,搅拌均匀。
6. 加入过筛的低筋面粉、可可粉和泡打粉拌匀。
7. 拌入香蕉丁。
8. 将蛋糕糊倒入烤模,铺平,排上胡桃,送入预热烤箱170度C烤约30-35分钟或至熟。
